Helianthus Tuberosus (Jerusalem Artichoke) is a perennial species of sunflower which grows knobbly, white or red fleshed tubers that can be eaten raw or cooked. Easily grown in cooler climates and tolerant of a wide range of soils, Helianthus Tuberosus is a popular choice for difficult areas. In summer, yellow sunflower-like flowers bloom. Plant in moist, well-drained soil in full to partial shade. Harvesting is in the autmant leaving some in the ground to grow the next year. Plants will spread, so sow in an area where it will not compete with other plants.
